English Whisky Week is always a significant moment for us. It is a chance to step away from the stills and talk about why we have chosen to put so much of our heart into this category. For both of us, this has never been about following a set path. It is about the slow and rewarding process of making a spirit that actually says something about where it is from.
Being part of the English Whisky Guild is something we really value. It is a community of makers who care about the liquid more than the marketing. We are proud to be part of a movement that is proving just how much talent there is right here in the North.
Creating Without a Script
One of the things we love most about distilling whisky in England is the sheer freedom of it. We are not tied down by the same rigid rules that define other regions. While we have a massive amount of respect for tradition, we have always enjoyed having the room to do things our own way - a modern way to create a whisky for today’s drinkers
This independence means we can obsess over the small details that others might overlook. Whether we are experimenting with different grain varieties or picking out specific yeast strains, every choice we make is about building character into the spirit. For our whisky drinkers, it means we can offer something that is not just a copy of what is already on the shelf, but a whisky with its own personality.
The Reality of the Craft
We have never been ones to take the easy route. Our approach to whisky is labour intensive, but that is the only way we know how to work. To get the depth of flavour we are after, we process nearly half a tonne of grain just to produce a single barrel of spirit.
It is a lot of work, especially since we manage everything from grain to glass ourselves. By using Manchester water during our mashing process and an open-air fermentation, lets us have a little party of the city in each drop we make, making sure the spirit is an honest reflection of our home. It is a deliberate and slow motion process, but we have always believed that patience is the most important ingredient we have.
A Movement Built on Grit
The English whisky scene is growing because people are looking for spirits with a bit more soul. With over 60 distilleries now operating across the country, there is a real sense of momentum that we find incredibly exciting. This is not about industry numbers. It is about independent makers proving that you can build world class spirits in the heart of a city.
Manchester has always had a bit of grit and a lot of creativity. We like to think our whisky carries that same attitude. We are patient, we are focused on the casks quietly maturing and we are proud to be representing our city on a global stage. We are not just filling barrels. We are building something we hope will last.
Why This Week Matters
We love English Whisky Week because it celebrates the hard bits of distilling. These are the parts that are not always glamorous but make all the difference to the final pour. It is a week for the makers, the bar teams, and the partners who know that a good reputation is built one batch at a time.
As we get closer to our first release, we are still the same people that started this journey together ten years ago. We are committed to the idea that flavour and independence have to come first. The English whisky movement is here, and we are just glad to be right in the middle of it.
