Oyster gin. Something to test our creativity and your palate.
Why Oyster Gin?
In this very exciting collaboration, we have worked with Michelin-starred mana, using their discarded oysters to make a totally unique spirit. Mother of Pearl is an exquisite, sophisticated gin, in which we use pine, lemon and oysters.
What does it taste like?
Each sip of our oyster gin will transport you to the wild Northern coasts with an aroma of fresh sea air and the distilled essence of fresh oysters, rich woody pine, and bright lemon.
Are you intrigued? It’s an unusual gin, but it’s one we’re really proud of. It’s won a Gold Medal at the IWSC, who described it as having
A very distinct seaside aroma with shellfish, particularly oysters leading on the palate. Offers some juniper spice and bountiful amounts of salinity. Unusual and a brilliant base for a martini.
Simon Martin of mana has said:
It’s wonderful to see our Oyster shells, which are usually discarded, being transformed into something so unique and purposeful.
Manchester Gin mirrors our ethos and methods to create a spirit which is balanced, refined, but above all, delicious.
Collaborating with other people and businesses sets us new challenges and allows us to stay at the top of our game creatively. This partnership has definitely tested us, and it took dozens of distillations before reaching the perfect liquid. Now we’re delighted with the finished product and can’t wait for you to try it.
